Fascinated by the glamour of rapidly growing Hospitality Industry, Harpreet Singh, Born in 1984, joined Bachelors in Hotel Management and Catering Technology and also qualified Masters in Hotel Management and Catering Technology with specialization in Food production. He has a gigantic experience in Industry and Academia. The author was awarded “Culinary Educator of the year” award by Chef Association of Five Rivers in 2017. Chef was also appointed as a Jury member by Ministry of Tourism, Government of India for “India Skill Competition”. He has written books on Hospitality industry and research papers on Gastronomy and also researching on Food Anthropology. The present work is a presentation of his vast and varied expertise for the students of Hospitality and Tourism. Jaswinder Singh is an Assistant Professor at Panjab University's University Institute of Hotel and Tourism Management. He is also associated with various universities in northern India as a subject expert. Chef Singh has presented research papers at conferences and published his work in national and international journals. He has authored a book on Himachali cuisine and organized culinary workshops in northern India. He previously served as the honorary secretary of the Chef Association of The Five Rivers and has shared his thoughts on culinary trends on national and international platforms. Chef Jaswinder Singh's expertise lies in the field of culinary arts, specifically in regional cuisine specifically on Tandoor, on Cuisine of undivided Punjabi cuisine. He is pursuing his Ph.D. and holds an M.Sc. in Hotel Management, Catering, and Tourism, as well as a B.Sc. in Hospitality and Hotel Administration. He was also a Co-PI in TIGR2 ESS, a project associated with Ahar kranti, aimed at sustainable food supplies. Chef Singh's work on Punjabi food on a plate has been recognized by various culinary forums in India.
